Pastificio Morelli's durum wheat Busiate are a typical pasta from the Sicilian tradition, particularly from the cuisine of Trapani. Their original spiral shape, as well as their name, comes from the historical handmade processing due to the Busa, or the stem of a typical Mediterranean maquis plant that was traditionally used to twist the busiate. This is a very porous handmade pasta that can hold the seasonings very well. They hold their cooking very well and do not flake even when sautéed. Try them with pesto or with anchovies and breadcrumbs.
